Glazed Pork Bake
You Need
Eight strips of belly pork Three ounces of Demerara sugar
Two tablespoons of honey One teaspoon of mustard
Juice of one lemon One and half pounds sliced potatoes
Half pound of sliced carrots Quarter pint of stock
Salt and pepper Quarter ounce of butter
Three pint oven dish
Method
Rub the butter over the base and sides of the dish and place half of the potatoes in the bottom of the dish. Season, then spread over all of the carrots, season again and top with the remaining potatoes and pour over the stock.
Cut the rind from the belly pork strips and arrange them on top of the potatoes. Mix the honey with the, mustard, sugar, and lemon juice and coat the pork thoroughly with the mixture.
Cover the dish with foil and bake in the centre of the oven on gas mark six or 220° for ninety minutes, removing the foil for the last fifteen minutes or so until the pork turns brown and crispy. Serve with garden peas
Halve the ingredients for a smaller family

Boiled Fruit Cake
You Need
One cup of sugar Two cups of flour
One cup of milk Half teaspoon bicarb
One cup of sultanas Half teaspoon baking powder
Four ounces margarine One egg
Method
Put sugar, milk, sultanas and margarine into a saucepan on low heat, bring to the boil stirring well. Allow to cool then add flour, baking powder, bicarb and egg. Beat well and turn into a eight inch lined and greased baking tin.
Bake at gas mark four or 175 degrees electric for one hour on the middle shelf
A teaspoon of almond essence can be added which gives it a nice flavour.

Spiced Dumplings
This recipe is low in fat but is so enjoyable
You Need
Two ounces self raising flour Pinch of Salt
Half teaspoon mixed spice Pinch of ground nutmeg
One ounce suet One tablespoon of sultanas
One tablespoon of mixed peel Water to bind
Method
Sift the flour with the salt and spices. Add the suet then stir in the sultanas, peel and enough water to make a slightly sticky dough, but one you can handle.
Bring about two pints of water to boil, form the dough into two or three small balls with floured fingers then drop them into the boiling water. Bring the water back to the boil and allow to boil rapidly for ten minutes, lower the heat and simmer for a further five or six minutes.
Remove the dumplings and drain, then sprinkle with sugar and spice to taste
Serve with yogurt or custard whilst still warm

Quick Pasta Bake
This recipe serves four and is a ideal, very tasty recipe if you are pushed for time
You Need
Eight ounces of pasta shapes Seven ounces of bacon cut into strips
Seven fluid ounces of milk Can of condensed chicken soup
Two ounces peas Salt and pepper
Four and half ounces of grated cheddar cheese
Method
Cook the pasta for 15 minutes & drain well, meantime grill the bacon and in a small bowl mix together the soup and milk then add to a large ovenproof dish containing the cooked pasta, peas and bacon. Season to taste and sprinkle the grated cheese on top
Bake at gas mark six or 210 degrees electric for twenty minutes on the middle shelf
Serve with vegetables or salad and some fresh crusty bread

Greek Rice Pudding
You Need
One glass of pudding rice Peel from one Lemon
Three eggs One glass of Sugar Three tablespoon's Cornflour
Pinch of Salt 6 glasses of Water for Rice Half a glass of Milk
Ground Cinnamon
Method
Boil the rice & salt for 12 minutes then drain
Beat the eggs, sugar, lemon peel, cornflour and half a glass of milk, add to the rice then boil for 5 minutes stirring constantly
Pour into a serving bowl and sprinkle the cinnamon on top
